Cinnamon Oatmeal Pancakes

Full disclosure- I’m not a pancake person. It’s not that pancakes are bad, but I’m a savory breakfast type of person, and pancakes tend to be too sweet for my liking. Like a pastry for breakfast, it just doesn’t appeal to me. But recently my son and I went out to lunch together and he ordered oatmeal pancakes and let me sample them. They were fantastic. Pancakes always appeal to him, but these were hearty and filling enough to appeal to me also, with that whole grain nuttiness that I love. So we got home and found some recipes, tweaked them to our liking (we LOVE a lot of cinnamon and like to add buttermilk to everything), and we’ve been making them ever since. These are also gluten free, if that’s your thing. Hope your family enjoys them like we have.

You will need:

2 c old-fashioned oats

1 c buttermilk

2 eggs

2 T ghee or butter, melted

1 medium banana

2 T honey or maple syrup

1 T cinnamon

2 1/2 t baking powder

1/2 t salt

splash of vanilla

Add all ingredients into your blender, and blend until you have a smooth batter. Heat your pancake griddle and pour individual pancakes from your blender pitcher. That’s it! No messy scooping (and spilling). To break down the phytic acid and make these more digestible, put all of your ingredients in your blender the night before and store pitcher in the fridge until morning.

These were delicious topped with peanut butter!

    Did you ever try the mesquite flour in anything? If you like nuttiness I think you might like the nutty taste of mesquite flour.

      I’m glad you reminded me.. I put it in the freezer after you sent it, and you know, out of sight out of mind. I’ll get it out and make your recipe tomorrow:)
