3 Ingredient Peanut Butter Cookies
Truly, these cookies have 3 ingredients. Real, wholesome ingredients. Not 3 packages of things like a lot of the “easy” recipes you see online these days. Peanut butter, egg, and sugar. That’s it!
Funny story. I spent all day in the kitchen yesterday preparing for the holidays as well as an upcoming hunting trip of my husbands. Well, just as I was finished cooking the last thing, my neighbor texts me and says he needs to hire me to make cookies. His wife is “retired…apparently from everything” he tells me. He says he has all the ingredients, so I told him to bring them over. He showed up with a jar of peanut butter and a little Betty Crocker cookie mix packet. I told him to save the packet for a rainy day, but that I would still make him peanut butter cookies. Luckily, someone shared this simple recipe with me years ago, and truthfully it is the only peanut butter cookie recipe I’ve ever used. It probably would’ve taken me longer to read the directions on the packet than to mix these up! We love it and I’m sure your family will too. This recipe makes 10-12 cookies.
You will need:
1 c peanut butter (smooth or chunky)
1 c sugar
Preheat oven to 375 degrees. In a medium bowl, combine sugar and egg. Mix in peanut butter until everything is evenly combined. Using a cookie scoop, scoop onto parchment lined baking sheet. Using a fork, make a criss-cross pattern on the top of each cookie. Bake in preheated oven 10-12 minutes until slightly golden around the edges. Let cool and enjoy!
