Cranberry Orange Mini Loaves

This bread is really delicious and comes together quickly. I typically bake mine in 4 mini loaf pans, which are the perfect size for gifting. Alternatively, you can bake in one standard size loaf pan. You can also change up the ingredients a bit depending on what is in season and what you have available. Cranberry Orange is my favorite to put in treat boxes at Christmastime. But I have also made a Blueberry Lemon version, as well as Lemon Poppy seed. They’re all fantastic. I love recipes like this that are flexible and dependable. I hope you enjoy this bread as much as my family does.

You will need:

1 3/4 c all purpose flour

2 tsp baking powder

1/2 tsp salt

1/2 c butter, melted and cooled

3/4 c sucanat or white sugar

3/4 c sour cream ( I have used plain yogurt in a pinch!)

2 eggs

Juice and zest of one orange

2 tsp vanilla extract

1 c frozen cranberries

Preheat your oven to 350 degrees. Prepare mini loaf pans by cutting and placing a sling made with parchment paper into each pan, and spray with cooking spray (I use an avocado oil cooking spray). Place on a cookie sheet and set aside.

In a medium bowl mix together first 3 ingredients. In a large bowl, combine butter, sucanat, sour cream, eggs, vanilla, and juice and zest. Add dry ingredients to wet and stir to combine. Add frozen berries and gently fold to combine. Divide batter equally among your loaf pans. Bake in preheated oven 25-30 minutes. Let cool and enjoy! A slice of this goes great with a cup of hot black coffee!

These mini loaves can be wrapped in plastic wrap and frozen for later.
