Not so long ago I started making some changes to my diet, eliminating sugar, lowering my carb intake and going mostly gluten free. My husband loves me, so at my request he bought the Trim Healthy Mama plan book and cookbook for me, and I am slowly adapting my favorite meals to fit in that plan. This meal would be a crossover due to the baked chips, but taco meat fits neatly into the “E” category too if the hamburger is rinsed. Try it out!
- 2 tsp chili powder
- 1 1/2 tsp cumin
- 1/2 tsp paprika
- 1 tsp salt
- 1 tsp crushed red pepper
- 1 tsp garlic powder
- 1/4 tsp glucomannan or 1 tsp cornstarch
- pinch of oregano flakes
- 1 tsp onion powder
Cook ground beef and drain. Rinse under hot water to remove fat and return to pan. Stir together seasonings and sprinkle over meat. Add 1/2 c of hot water and 1 Tbs ketchup. Stir to combine and let thicken.
Mix with refried beans or black beans and 4 Laughing Cow lite cheeses and divide into Carb Control tortillas for a week’s worth of E lunches, or serve over greens with cheese and diced peppers, tomatoes and sour cream or ranch dressing for an S taco salad. This seasoning mix would be great with chicken too!
If you aren’t interested in the THM plan, this seasoning is even more versatile. Use it in every delicious, indulgent casserole or soup that calls for taco seasoning mix, and pat yourself on the back for kicking the MSG out of your kitchen.
