Knockoff Taco Bell Beefy Five Layer Burrito Cassserole

I love Taco Bell. I know it’s junk food, but I don’t care. Fortunately, I live too far away from the closest one to go there too often. There’s also the fact that it costs a small fortune to get enough food for a big family at a fast food restaurant. Not to mention that it would be just plain weird to order 25 beefy five layer burritos.

Luckily I have this easy recipe for you. This casserole is easy to make and will satisfy your Taco Bell craving. Keep one on hand for the next time you’re going to drink too much Corona. I’m kidding. Mostly.

You will need:

  • two pounds of ground beef
  • two envelopes of taco seasoning
  • 2 cans of Fiesta Nacho Cheese soup
  • 1 onion
  • 8 ounces of sour cream
  • 8 ounces of sharp cheddar
  • 8 ounces of pepper jack
  • 12-16 tortillas (depending on the size you buy)
  • two cans of refried beans

In a separate bowl, stir together the sour cream and soups.

Spread half of the soup mixture in the bottom of a 13×9 pan.  Rip half of tortillas into pieces and spread over surface.

Spread half of the meat and bean mixture over tortillas and sprinkle with half of the pepper jack and half of the cheddar.

Repeat layers, ending with the cheeses.

IMG_3534Bake at 350 degrees for 25 to 30 minutes. It’s a good idea to place some foil or a cookie sheet under this while it bakes. This is a big casserole that will feed an army.
