I love a good sandwich for lunch.
I don’t love ordering chicken salad and then getting a roll full of something equivalent to the cafeteria mystery meat of my high school days.
If you want a chicken salad sandwich that is packed with texture and flavor, give this recipe a try.
Stir together the following ingredients:
- 1 lg can of chunk chicken (I used 12.5 oz of Swanson’s chunk white meat chicken)
- 2 stalks fresh celery, chopped
- 1/2 small onion, diced
- 1/2 Tbs white vinegar
- 1/2 tsp ground pepper
- 2 Tbs sour cream (can use light)
- mayo to desired consistency
I’ll be posting lots of soup recipes over the next month or two as the cooler weather settles in to stay. Combine one of them with a chicken salad sandwich for a great flavorful lunch.
