Legit Chicken Salad

I love a good sandwich for lunch.

I don’t love ordering chicken salad and then getting a roll full of something equivalent to the cafeteria mystery meat of my high school days.

If you want a chicken salad sandwich that is packed with texture and flavor, give this recipe a try.

legit chicken saladFor this batch, I used a large can of chunk chicken. That comes with built in saltiness. If you want to cook and shred your own chicken breasts, you will need to season accordingly.

Stir together the following ingredients:

  • 1 lg can of chunk chicken (I used 12.5 oz of Swanson’s chunk white meat chicken)
  • 2 stalks fresh celery, chopped
  • 1/2 small onion, diced
  • 1/2 Tbs white vinegar
  • 1/2 tsp ground pepper
  • 2 Tbs sour cream (can use light)
  • mayo to desired consistency

legit chicken saladI usually don’t make this until I’m starving and have to eat right away, but it’s even better if you have self-control patience and can cover it and let it chill for several hours.

I’ll be posting lots of soup recipes over the next month or two as the cooler weather settles in to stay. Combine one of them with a chicken salad sandwich for a great flavorful lunch.
