Three Ingredient Pumpkin Donuts

Fall is here. The crisp mornings, afternoon sun and the apple and pumpkin flavored treats are some of my favorite things about fall. I had to share this simple but delicious recipe.

Make the donuts by stirring together a box of vanilla, yellow or spice cake mix, 15 ounces of pumpkin puree and 1 tablespoon of pumpkin pie spice.

It’ll be a little lumpy. That’s okay. Scoop it all into a plastic storage or freezer bag and cut one corner off.

Pipe it into a greased donut pan. This recipe should make about 12 donuts.

I smoothed out the tops a little bit with a spoon, then baked them in a 350 degree oven for about 15 minutes.

Here’s my super simple vanilla glaze recipe:

Stir together 3-4 tablespoons of warm cream cheese, 1 and 1/2 cup powdered (confectioner’s) sugar, 1 tablespoon of vanilla extract and 1 tablespoon of milk. You can add a little more milk for a thinner glaze that will soak in to the donuts.

Just spoon the glaze over the top and watch them disappear. Delish!
