Hi there, hungry peeps! How are you? I’m making something yummy for you tonight. Because nothing says “I’m getting ready to start P90X” like some knockoff Taco Bell burrito goodness, am I right?
Luckily, I live inconveniently far away from Taco Bell. And I’d be worried about what the employees would say if I came through the drive-through asking for twenty beefy five layer burritos. Maybe I’m the only one that fears that the cashier does a head count of the car’s occupants to make sure the huge order is justified. Anyway…..
This casserole is easy to make and will satisfy your Taco Bell craving. Keep one on hand for the next time you’re going to drink too much Corona. I’m kidding. Mostly.
You will need:
- two pounds of ground beef
- two envelopes of taco seasoning
- 2 cans of Fiesta Nacho Cheese soup
- 1 onion
- 8 ounces of sour cream
- 8 ounces of sharp cheddar
- 8 ounces of pepper jack
- 12-16 tortillas (depending on the size you buy)
- two cans of refried beans
In a separate bowl, stir together the sour cream and soups.
Spread half of the soup mixture in the bottom of a 13×9 pan. Rip half of tortillas into pieces and spread over surface.
Spread half of the meat and bean mixture over tortillas and sprinkle with half of the pepper jack and half of the cheddar.
Repeat layers, ending with the cheeses.
Creamy, cheesy, spicy deliciousness. Worry about the p90x tomorrow.
