One Pot Cheesy Smoked Sausage and Pasta

If you are looking for a quick, no muss, no fuss dinner that packs a flavor punch, this one is for you. This cheesy smoked sausage and pasta can be made in one pot, and comes together in just a few minutes.

Ingredients

  • 1/2 to 1 cup diced onions
  • 1 pound Hillshire Farms (or your favorite brand) smoked sausage
  • 2 cups beef broth
  • 1/2 c half and half
  • 1 can original Rotel
  • 8 oz Monterey Jack cheese, shredded
  • 1 lb pasta of your choice

Directions:

Brown sausage and onions in a spoonful of olive oil.

Stir in Rotel, half and half and beef broth. It won’t look too great, but hang in there.

Add uncooked pasta, and bring to a boil while you grate the cheese.

Stir in grated cheese, reduce heat, cover and simmer for fifteen minutes or until pasta is cooked through.

Then you can give it one last stir, load up your plate, and enjoy the fact that this delish dinner was made in one pot and there are hardly any dishes to wash!
